Euphoria Bakery, Victoria’s first sugar- and grain-free bakery just launched last month and it has been a total hit. The Tasting Victoria team had the opportunity to try their products, and we are truly impressed by how good they tasted and how you can’t even tell they don’t have any sugar.
We sat down with Lucia Nuechter, Euphoria’s lead baker, to learn more about them.
How did the idea of a sugar- and grain-free bakery start?
Euphoria Bakery was founded by a Victoria dad who wanted to treat his kids with sugar-free treats and couldn’t find a lot of options in Victoria. We started experimenting baking sugar-free treats with a few rules:
- No traditional sweeteners. The cookies couldn’t spike blood sugar levels.
- They had to be reasonably healthy. No weird fillers or preservatives, just ingredients that we’d feel good about feeding to our families.
After a few disastrous experiments we were shocked: the cookies we made tasted… good.
After months of testing with friends and family we decided to turn it into a business.
Those who are part of Euphoria are deeply passionate about the place that it can have in the community. There are not enough options that support diverse diets and preferences in the realm of desserts. We want to offer truly delicious treats to anyone. To foodies interested in what Euphoria has to offer, to parents wanting to offer their children sugar-free options that are not boring and bland, to those on low-glycemic, sugar-free, low-carb, and gluten-free diets. The list goes on!
We are so excited and proud to make treats for those that struggle to experience the community, fun, and indulgence that is part of eating sweets. Euphoria is also designed to provide delicious choices to food lovers looking to try something new.
How was the first month in business?
It has been a really exciting past month with many successes in the bakery, as well as many challenges. We initially launched our website on the 16th of May, offering the chocolate chip cookies, the blueberry breakfast cookies, the protein power balls, and the coconut blueberry muffins. After our launch we agreed that our goal was to focus on offering baked goods that truly feel like an indulgent experience. A sweet, fun, exciting treat, rather than what often pops into our minds when we think of a gluten-free, grain-free, and sugar-free dessert! Our current line up of products is reflective of that personality, and we couldn’t be more excited about it.
What’s coming next for Euphoria?
Next on our agenda is working towards offering our customers the option of pick up rather than delivery only, as well as being available through Victoria’s delivery apps. We are working away on developing ice cream sandwiches and playing around with cake making. They are coming very soon!
What’s your favourite treat from Euphoria?
Choosing my favourite treat is what I imagine it would be like to choose my favourite child! I will say that I am very excited to launch the ice cream sandwiches and can’t wait for our customers to try them out.
Is there anything else you’d like our readers to know?
As a small team deeply passionate about all things food, we are working very hard to make the best treats possible. We are using ingredients that can be finicky and variable at times and this has been requiring a lot of learning and creativity. The thoughtful feedback we have been getting has helped to guide us and will continue to as we grow.
