Fall is all about comfort food and finesse at LURE Restaurant & Bar

From sweet treats and preserves to smooth red wines and creamy ales, fall calls to us to slow down, savour, and celebrate the harvest!

The chefs at LURE Restaurant & Bar love fall and all the special local ingredients available on the Island. The kitchen is buzzing with new menu ideas—it is all about comfort food, so we’re talking braises and confits. Keep an eye out for short ribs, duck confit, and some fabulous fall desserts highlighting pumpkin and apples. And as halibut goes out of season, we welcome back sablefish as it is so wonderful throughout the winter.

Although mushroom season has gotten off to a slow start, the mushrooms that can be found are of a very high quality. The chefs have been receiving chanterelles which will be showcased on feature dishes throughout the fall. “We’ll be looking for the rain in the next few weeks and then we’ll see new mushrooms popping up. The team will be spending hours and hours cleaning mushrooms soon.” says Chef Dan Bain.

LURE welcomes new Sous Chef, Blair Vaillancourt, joining the team from the Wickaninnish and Burrowing Owl. Blair and Executive Sous Chef Mike Sharpe will jump in to execute the bulk of the fall menu creation this year under the guidance of Chef Dan.

Chefs Mike and Blair explain that in the summer you’re playing with the fresh ingredients to let them stand on their own but in the fall there is a lot more technique involved. Slow cooking items, ingredients that take a lot longer to braise and prepare—parsnips, potatoes, short ribs, confits, beans—more cellared items. “With not the same variety of fresh ingredients that the summer brings, the fall ingredients require a bit more gusto, technique, and flair.”
