A Victoria restaurant is hosting a tequila tasting this month

A well-known restaurant in Victoria, Fathom, is hosting a special, one-night only dinner and tequila tasting menu this month and we can’t wait to see what it’s all about.
Promising a night of exceptional cuisine and a lineup of premium tequilas, the Fathom Patron Dinner is taking place Aug. 22 on the restaurant’s all-season terrace and will feature a five-course gourmet dinner with each course accompanied by the perfect pairing of Patron.
The set menu for the evening is comprised of a blueberry scallop gravlax, dungeness crab with chicken chicharrones, chorizo-stuffed calamari, smoked sablefish with corn chowder and a blueberry lemon yuzu cheese tart to finish. Each course introduces a new style of tequila, starting from silver and ending with an exquisite el alto.
“Our talented Restaurant Chef, June Jang, has crafted a menu that showcases the finest ingredients, expertly matched with the distinct notes of Patron Tequila, creating an immersive dining experience that tantalizes the senses,” Fathom wrote on their website.
Chef Jang, who will be overseeing the five-course tasting menu for the evening, has had a long career in hospitality on the Island, working at several renowned restaurants and hotels including Hawksworth, Chambar, Fairmont and Sheraton. Reflecting the natural setting of Victoria, his menu mainly uses West Coast ingredients to create a Pacific Northwest taste with Asian influences.
Taking place on the restaurant’s charming outdoor terrace—which includes a heated pergola adorned with fire tables, making it accessible year-round—nestled right in the heart of Victoria’s inner harbour, this dinner will make for an iconic experience in the city complete with a view.
