Who would have thought you could make healthy pancakes with just two ingredients? Three if you’re feeling really adventurous. Banana pancakes have to be one of the easiest breakfasts out there. They are extremely simple and delicious, making for the perfect snack, breakfast, lunch and even dinner, if you wanted to!
Feel free to add in some old-fashioned rolled oats to your pancakes to add a bit of density and extra protein. You can use your blender or coffee grinder to grind up your oats (if preferred), which creates a fine flour to add a protein boost to your pancakes. If you’re feeling extra fancy, add a dash of cinnamon and vanilla.

Grilled Cheese With a Twist
Ah the classic grilled cheese sandwich, a staple for any bread and cheese lover. Now add to the classic grilled cheese; eggs and pesto, and you have one heck of a protein packed sandwich. Try this recipe with olives, whole grain mustard and your choice of mayonnaise. I like to use Polish mayonnaise! Feel free to add a side of fresh fruit for some added colour and vitamins to your dish! I recommend using a hearty sourdough bread to provide some nutritional balance. Sourdough bread crisps up well to a golden brown, for that satisfying crunch in every bite.
