Noodles for Lunar New Year

It is traditional to serve a noodle dish for Lunar New Year as long noodles symbolize a long life.

There are many types of noodles out there, but for these Chili Oil Noodles, dried handmade wheat noodles are the best. The noodles are a bit thicker in the middle and thinner on the edges, which gives the noodles a great texture. The edges are also often wavy so they really hold the sauce well!

You can buy dried handmade wheat noodles at your local Asian grocery store. But if you can’t find them, you can substitute it with egg noodles or udon noodles as well.

Delicious Noodles Ready in Under 10 Minutes

These Chili Oil Noodles come together in the amount of time it takes to boil the noodles, making this recipe great for Lunar New Year or for any time during the week!

While the noodles are boiling, fry the garlic, scallions and red chilli flakes in vegetable oil. For an additional kick, add in some chili flakes from a jar of chili oil. These are super spicy but add a lot of great flavour!

Once the noodles are done cooking, simply toss them in the spicy chili oil until they are covered in the oil and are glistening.

Serve them with some blanched bok choi or choi sum… and don’t forget an extra drizzle of chili oil on top!

Recipe: 10-Minute Chili Oil Noodles

Servings: 4Prep Time: 5 minutes | Cook Time: 5 minutes | Total Time: 10 minutes

INGREDIENTS

  • Water, for boiling

  • 4 bundles dried wheat noodles, approximately 400 gr

  • 1/4 cup vegetable oil

  • 4 cloves garlic finely chopped

  • 4 scallions white and light green ends finely chopped, dark green ends cut into 1 inch pieces

  • 1 tablespoon dried chili flakes

  • 1/2 teaspoon ground white pepper

  • 1 tablespoon chili flakes (from chili oil)

  • 1 tablespoon soy sauce optional

  • 1 tablespoon chili oil optional

INSTRUCTIONS

  1. Bring a large pot of water to a boil and add the noodles. Stir so that the noodles do not stick together. Reduce the heat to medium and let cook for 4 minutes.

  2. While the noodles are boiling, make the sauce. Add the vegetable oil to a pan over medium-high heat. Once hot, add the chopped garlic and white/light green ends of the scallions and fry for 20 seconds. Add the dried chili flakes and white pepper and fry for another 20 seconds. Finally, add the chili flakes from the chili oil, then reduce the heat to low.

  3. Once the noodles are cooked, add them directly to the pan along with the green ends of the scallions. Toss everything together and season with soy sauce if needed. Add the noodles to a plate and drizzle with extra chili oil. Serve immediately and enjoy!

NOTES You may need to add soy sauce to this recipe depending on if there is salt in your chili oil/chili oil flakes.
