A single goal: to make the best sausage in Victoria
In 2017, young but experienced in their craft, Kyle Clayton and Shane Harwood started a sausage company on their days off. Vending primarily through the Esquimalt Farmers’ Market, Haus Sausage made their product in the off hours of the restaurant kitchens they worked in. The goal that drove this was simple, sausage made well and made using island raised animals.
Many years have passed since those humble beginnings of late nights and no proper equipment. Yet today they continue to attend many markets around the city, and even the Duncan Farmers’ Market. You can find their name at dozens of retailers and restaurants around the city that proudly carry or use their food as ingredients in dishes.
In 2020, a kitchen and retail outlet was opened. Still, Haus Sausage follows a predominantly “from scratch” approach to the products while adhering to the ethos that started it all: locally raised, small batch charcuterie.
