A new breakfast restaurant is about to open its doors in the former Bear and Joey location. The restaurant is a collaboration between Victoria favourites The Ruby, Jones Bar B Que, Discovery Coffee, and Yonni’s Donuts, partnering for Victoria’s newest restaurant: The Breakfast Shop.
“The Breakfast Shop is like a creation as if The Ruby and Discovery Coffee had a baby. However, we've been very mindful of the aesthetics of the room, and the feel and that we want to have the same warm, welcoming service, but we don't want it to look like a carbon copy of what we've already done. So we're being a little adventurous with the style of the room as well,” says Chris Jones, owner at Jones Bar B Que and The Ruby in a short interview on instagram.
The restaurant combines comfortable classic concepts with scratch techniques and high-quality ingredients. From making their own brioche bun to grinding their own meat for their breakfast sausage, The Breakfast Shop’s backbone ingredient is the simple egg.
“The Breakfast Shop was, in the beginning, inspired to do a quick service restaurant that was focused on getting breakfast out in a timely fashion. And really leaning on the fact that Discovery and Yonni’s Donuts is built at speed. And you know, the quality matches what Chris brings when it comes to The Ruby and Jones Bar B Que, and just pairing those together and building a program that we think Victoria’s gonna be really excited about,” says Logan Gray, owner at Discovery Coffee and Yonni’s Donuts on instagram
The menu includes breakfast sandwiches, breakfast bowls, lunch sandwiches, coffee, lattes, cappuccinos, tea, and they even have a kids menu. Open from 7am to 4pm.
